We tried this new recipe last night, and it was really good. I wasn't sure while I was making it if it would be or not. But we were quite pleasantly surprised!
1. Thinly cut two large chicken breasts into strips.( I used three small chicken tenders) Saute in olive oil with garlic over medium heat until cooked through. Be careful not to over-cook it, you want it to be tender.
2. Add two-three cups of frozen mixed veggies, thawed. I used broccoli, cauliflower and carrots. Add about 1/3 cup of water and 1/3 cup of pesto sauce. This can usually be found near the spaghetti sauce section of your grocery store.
3.Bring all this to a boil, then reduce heat and simmer until tender, 7-9 minutes.
4. Stir in some shredded parmesan cheese, and serve over brown rice. Sprinkle more cheese on top if desired.
