Blintz Pancakes

I found this recipe recently in my mom's recipe box. We had these pancakes for dinner last night, and they were soooo good! Even my husband, who hates cottage cheese, had to admit that these were quite tasty. However, this is not a recipe to try to go 'healthy' on. You definitely want to use whole milk sour cream, white flour, etc, to get the full effect of the pancake. I liked them with strawberry sauce on top, although Joel preferred the traditional pancake syrup. Either is good. This is a good recipe for when you want something 'special' for breakfast, or want to go all out with a 'breakfast for dinner', like we did last night.

Blintz Pancakes
1 cup flour
1 Tablespoon sugar
1/2 teaspoon salt
1 cup sour cream
1 cup small-curd cottage cheese
4 eggs, lightly beaten.

Mix wet ingredients and dry separately, and then mix it all together. Heat a skillet over medium heat, and cook pancakes until lightly brown on both sides. This makes about 8 small pancakes.
